Plantation Reserve Barbados Amber Sugar
Plantation Reserve is a naturally coarser, lighter cane sugar from Barbados. It’s milled using only selected cane, cut at the height of the season from the old plantations of the island.
Unlike white sugar (and some brown sugar), Plantation Reserve is milled not refined, making it less processed. Milling involves crushing the cane to extract the cane juice which is then heated by the island’s most experienced ‘pan boilers’ to produce crystals that are coarser and lighter in colour than other raw cane sugars. The sugar is certified by the Barbados Sugar Testing & Research Unit.
In a blind taste test, we asked award-winning UK food and wine writer Richard Erlich to taste Plantation Reserve. Here’s what he said:
“There’s a caramel-like sweetness to Plantation Reserve and floral notes of honeysuckle. It also has an excellent persistence of flavour with the taste qualities pleasantly remaining on the palate.”
